Where's the beef?

Apparently it's in Texas!! The University of Nebraska-Lincoln has been nice enough to find the top 5 beef states and list them in a FAQ. Texas tops the list with more than twice the number of beef cows than the number 2 state, Missouri. Oklahoma, Nebraska and South Dakota also make the top 5. Texas boasts nearly 5.5 Million head; Missouri has just over 2 million.

Once you know where your beef is, the National Cattlemen's Beef Association would like you to keep it in the refrigerator or the freezer. The greater the exposed surface area of the meat, the shorter its shelf life. Whole steaks can stay in the fridge for 3-4 days and the freezer for 6-12 months. However, ground beef should only be kept 1-2 days in the fridge and a short 3-4 months frozen!
